I went to Cuba on a spontaneous trip with new friends last year. This is me kissing a building because I fell head over heels in love with Cuba. The buildings, the people, the energy, the colors and over all life.

As always I travel for food and was in a little shock when I learned it may be hard to find vegan food. It was true, I had a hard time finding food I could eat and without internet almost impossible. I decided I was in the Cuba cleanse.. At first I was a little cranky, but something amazing happened. My body felt great. I was living off very little in comparison to what I normally eat. So many small issues I had, seemed to just disappear. When I returned back to LA I was happy to eat. I went to a few restaurants and noticed pretty quickly that something was wreaking havoc on my system. Symptoms started reappearing very quickly and their was no denying that I felt better in Cuba.

As soon as I landed in Kauai, I started to try to see if I could figure it out.

It took months, I was relentless, I had a lot of setbacks but I finally figured out that my body does not like soy. A vegan that could no longer have tofu. I started to feel better right away. I discovered that I am so sensitive that I can’t really have any soy. The hardest thing I have had to give up is soy sauce (Tamarine). I use it in so many recipes and love the flavor it brings. I have found that my health and vitality bring so much flavor to my life that I can live without soy. Feeling good is more important than any food I may crave or love.
It’s been over a year now and I can’t tell you how many issues I have had for years have disappeared.
I owe it all to Cuba.

It only took days of eating simply there for my body to show me that something was working.

It may seem a bit daunting to figure these things out but your your health is important and it’s worth the investment in yourself to go down some hard roads to find truth!

A Dream Come True

In 2011 I didn’t have the restaurant but I had a dream. One part of that vision was to be published in Veg News Magazine. I wrote them and let them know if they were ever looking for a recipe contributor I was their girl.  Today that part of the dream came true. Veg News is publishing my recipes and I am a recipe contributor. They finally wrote me back this year, 7 years later. You know what…. I was ready for them. In those 7 years even though I hadn’t heard back from them, I learned and grew as a chef, recipe maker and human.

Today represents a yes. A simple yes to all the no’s I have heard. A whisper that the vision I have created is manifesting.  It is so amazing that I need to pinch myself and celebrate because it’s all about the journey. The journey of point a to point b.  It all started with wanting to teach people what I was learning about food and health. Just sharing what has worked for me.

The cookbook goes to press so soon and before you know it I will be holding “Good Food Gratitude” in my hands until then this will do. A win. A clue I am on my path and stay course.  Thank you Veg News, not only were you an intricate part of my transition to vegan but you are also making my dreams come true of helping other find health, especially animals!
