Acai is one of the top superfoods. Look below for the amazing list of health benefits.  This is an easy recipes that anyone can make and feel like they just ordered one from that cute vegan cafe that wows everyone and is Instagram pic worthy.  Acai degrades very quickly once it is picked from its palm tree so you normally find it in frozen puree packets or dried (Costco carries it too). We use the packets. I am lucky we have a company here in Kauai, Tambor Acai that brings it in from Brazil.

What you need:

1  ½ frozen acai packets cut in ½
1 cup frozen sliced bananas
½ cup non dairy milk (we use homemade Mac Nut Coconut Milk)


Place all ingredients in Vitamix and add lid and tamper attachment (stick). Slowly start to blend on low and gradually bring it up to high using the stick to move ingredients around until it resembles sorbet consistency. I use a silicone spatula to  transfer it to a bowl and then I top it with sliced fresh banana and ¼ cup of homemade granola (see recipe). You can make so many variations by bringing in toppings or adding to your base.

Additional Add-on Ideas:  Goji Berry, Hemp Seeds, Chia Seeds, Mac Nuts, Fresh fruit, Chocolate chips, Cacao Nibs, Peanut Butter, Almond Butter and more as toppings
Blend-ins:  Chlorella, Kale, Greens, Maca, Peanut and Almond Butters.
