Say yes to french toast and no to the eggs and cream. I read somewhere once that french toast was originally vegan, because we didn’t always have an abundance of eggs, and cow’s milk. I don’t know if it’s true but this recipe never has me missing french toast or feeling like something is missing. Best part is you probably have all the ingredients in your cupboard.

Serves 4

1 loaf of bread. Use a bread you enjoy french toast with sourdough, baguette, whole wheat – your preference
½  cup of all purpose flour
⅛ cup maple syrup
1 teaspoon cinnamon plus more for dusting
1 cup almond or any non dairy milk
Earth Balance Vegan Butter
Maple Syrup

How to make:
Cut bread as desired. In a pie dish, whisk flour, milk, cinnamon, and maple syrup together.  On medium low heat in a large skillet, melt 1 teaspoon of butter. Dip bread into batter and cook for about 3 minutes per side until a golden crust is attained. I dust mine with cinnamon before I flip because of my love for the spice, add it if you like take away if you don’t. Flip and cook until other side is golden as well. Repeat until bread or batter are gone.  I serve french toast traditionally, with butter and maple syrup. If I am trying to be fancy, I top it with fresh berries.
